Breadfruit Curry (Del Vanjanaya)
INGREDIENTS
1 large ripe breadfruit (skin and middle removed, cut into squares)
1 red onion, sliced
3 sprigs curry leaves
2 green chillies, sliced
1 small cinnamon stick
1 cup water
1 and 1/2 cup coconut milk
1 tsp mustard powder
1 tsp curry powder
1/2 tsp turmeric powder
1/2 tsp roasted curry powder
salt
METHOD
- Wash the breadfruit pieces
- Mix with raw spices, onion, curry leaves, chilli, cinnamon with water and let it boil
- When breadfruit is cooked, add the coconut milk and simmer
- Check the seasoning then sprinkle the roasted curry powder
- Remove from heat, serve with rice.
