Chicken Liver Pâté
INGREDIENTS
300g chicken livers
3 cloves of garlic
1 tablespoon chopped ginger
1 tablespoon chopped mint
1 tablespoon chopped parsley
2 bay leaves
3 tablespoons brandy
2 tablespoons olive oil
1/2 teaspoon chilli powder or paprika
1 tablespoon lemon juice

METHOD
- Trim and wash the livers then cook in a pan for about 10 minutes with all the ingredients except the parsley, mint, brandy and lemon juice.
- When cooked, make a fine pâté using a liquidiser, blender or food processor.
- Check the seasoning and serve with melba toast or biscuits.
